Green Conference Initiative: When eating out, look for restaurants that emphasize locally sourced ingredients and/or vegetarian/vegan meals. Locally sourced ingredients don't need to be trucked in thus reducing fuel use and resulting greenhouse gases. Animal farming uses more resources than plant-based foods. Feedstock for animals uses land and water that could be used for other crops and the animals produce waste that must be disposed of.

As a nearly annual traveler to Seattle, I can recommend these:
Cutter's Bayhouse -- on Western at the northern end of Pike Place Market. Local and regional food, well prepared, lots of windows, excellent for sunset dining, watching the ferries come and go. We always eat at Cutter's at least once and often twice on every visit; consistent friendly and knowledgable service and delicious food.
The Crumpet Shop -- I almost hate to mention it -- it's so small, but freshly made crumpets and a nice selection of brewed teas make this place very special. Near Metsker's maps on 1st Street.
Grand Central Bakery -- Pioneer District -- sandwiches and salads freshly prepared.
Anna in Albuquerque
